Saffron Pistachio

To create this fragrant, exotic, and lusciously tasty ice cream, we combine a delicate Spanish saffron flavor with chopped California pistachios. A favorite ice cream flavor in the East, we decided to pay tribute with our own version that makes use of the honey-like flavor and aroma of saffron, which boasts of a subtle earthiness, grassiness, and sweetness. We make sure to soak the saffron threads for two hours to extract the flavor before churning it with dairy. Once the ice cream is ready, we combine it with roasted and chopped California pistachios for a slightly chewy texture that results in a perfectly sweet gourmet ice cream.
